AzRA’s Vegetarian Chili Recipe!
If you’ve joined us for our 14 day Classic Adventure without an exchange (no guests hiking out or in on day 6), or on our 16 day Classic Adventures, you’ll know that by day 11 or 12, the reality of your journey’s end starts to sink in. With very few days left, our vegetarian chili offers the perfect comfort to appreciate the present moment. Accompanied by cornbread, apple coleslaw, and ginger snaps, this meal is loved by vegetarians, omnivores, carnivores, and everyone in between! Please note that this recipe makes enough for 32 people, so you’ll want to adjust the amounts for your personal needs.
Vegetarian Chili Recipe
- 6 yellow onions
- 6 red bell peppers
- 12 lb of sweet potatoes
- 1 large can of black beans (6lb 15 oz)
- 1 can of black beans (15 oz)
- 4 cans of diced tomatoes (28 oz)
- 5 packages of Chili Seasoning Mix
- 1 can of Chipotle peppers
- For Garnish: Shredded cheese, avocado, and Fritos
How to Cook!
Dice the onions and peel the potatoes, cutting them into small cubes. Chop the peppers and sauté all the vegetables in oil. Season with chili spices and chipotle to taste. Stir in the beans and tomatoes and let the mixture simmer until everything is tender. Serve garnished with shredded cheese, avocado, and Fritos.
Apple Coleslaw Recipe
- 1 Red Cabbage
- 6 Apples
- 6 Limes
- 3 bunches of Green Onions
- 2 bottles of Honey mustard dressing
- 1 bag of Pecans
How to Make!
Shred the cabbage and dice the apples and green onions. Squeeze lime juice over the vegetables, then mix in the pecans and dressing to taste. You could also shred the apples for a lovely texture!
